The following are the planned events around the Festival:

The heading photo is of our ducks who finally got brave enough to enter our pond, after eyeing it for five months.  Since these ducks were not raised by their mothers, they had no one to show them how to navigate safely in a natural body of water.  But once they entered the pond, now they spend their whole days there.

Although I haven't ever recommended a nutritional supplement in these newsletters before,  I am breaking that mold now with a magnesium product that has greatly improved my sleep. The pills contain seven different forms of magnesium, and that might be the reason they are so effective. It comes from a company called BIOptimizers and is called "Magenesium Breakthrough".  It is widely available.

Translation into Thai will occur. Contact Thanakrit Chintavara to register.

We suggest that all international guests reserve rooms at the Festival venue, which has reasonable pricing, and can be reached from the airport by shuttle bus, by train and subway, and taxis. the transfer time is about an hour.

Ruth's Favorite Cheese Pinwheel Cookie Recipe

Ingredients

  • 8 oz cream cheese
  • 1/2 cup butter
  • 1 1/2 cups all purpose flour, sifted
  • 1/2 tsp kosher salt
  • 1/3 cup seedless jam, more or less
  • small chopped walnut pieces

Instructions

  1. Cream together the butter and cream cheese. Mix in the salt and flour until combined and a ball starts to form. (Note: no sugar required)
  2. Use your hands to roll the dough into a ball, pressing down on the top so it's flat and will be easier to roll out (disc shaped). Wrap in plastic wrap.
  3. Chill 30 minutes.
  4. Generously flour your counter. Put the dough on your counter, sprinkle some flour over top. Use a rolling pin to roll the dough out to a 10" x 12" rectangle,
  5. Sprinkle the top with more flour, and roll up the dough in your rolling pin (at this point the dough is still thick enough that it won't break). Sprinkle more flour on your counter top. Flip the dough over, so what was the top is now facing the counter. Sprinkle more flour on top of the dough and roll it out to a 10" x 30" rectangle.
  6. Spread the jam all over, leaving half an inch bare on one of the shorter sides. Roll the dough up into a log, so you are left with a log that is 10" long. Chill for 15 minutes or longer.
  7. Preheat the oven to 375 F.
  8. Use  a sharp knife to make 1/4” slices
  9. Bake for 17-20 minutes.
  10. Remove from the oven, transfer to a wire cooling rack. The photo below is from Ruth's kitchen.  They pack well in Christmas tins for mailing.
